Sunday Best

A couple of months ago, Sainsbury’s had legs of lamb half price, I went to our small local sainsburys and they happened to have a couple Yellow Stickered down to half of that, so a large leg of lamb for £5 – bargin..

Today we will be having Roast lamb, studded with garlic and rosemary, with cauliflower cheese (part of Aldi super 6) new potatoes and peas.

When I make a Sunday Roast, I like the main event, whether that is Lamb, chicken, pork or beef to stretch.  I am part of a wonderful forum Old style money saving at Moneysavingexpert.com, the advice, recipes etc that are shared there is invaluable. If you get the chance, go and search ‘Rubber Chicken’ – you will be amazed how many meals one Chicken can make.

Anyway, I digress, I will roast the leg of lamb, 3 main meals today, then the left overs will become a lamb curry for later this week, with enough for 2/3 meals for the freezer – a good standby for those days when you havn’t got time or really cannot be bothered to cook. Sometimes I use the left overs as Shepherds pie etc – the number one rule is use it all.

Prep

I cook my cauliflower using the varoma on the Thermomix, the water will be used to make gravy, the cheese sauce is also made using the Thermomix, I always add a fat teaspoon of English mustard powder, it lifts the cheese flavour. I have made one for today, and one for the freezer.  Aldi have them at 39p each at the moment – will pick up another couple this week before ‘change over day’.

Dessert will be the meringues I made with ice cream and a blob of lemon curd – when and if we can fit it in…..

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. We live on the beautiful Isle of Wight, Hubby and I were born here, and just love our home. As I hurtle towards 50, my life as a full time (working) parent is coming to an end, with my eldest 2 kids living their own lives, and my youngest who started University in September. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
