I am a typical Monday morning hater – I get up around 5 and get to work between 6-7 am – I don’t mind getting up early, it’s the getting up for work bit that’s the problem… On the bright side, I now only work part time, so shouldn’t really complain – I have it easy in the scheme of things, it’s not ‘real work’ like a farmer or fisherman, I fly a desk 🤓
Today, after paid work, I have been doing some bookwork for Hubby, so wanted something quick and easy for dinner.
We recently returned from a lovely holiday in Porto, Portugal, and I had stuffed the kitchen full of easy things for the youngest to cook, only to find on our return that apparently ordering pizza was easier (he paid – Grrrr) – anyway it means that we have some convenience food to use up, so burgers it is then.
I bought Aldi Aberdeen Angus quarter pounders and will serve on toasted Brioche Buns with salad and Homemade Mayonaise. I have 3 baking potatoes to use up, so HM wedges will be baked. Not my favourite meal, but it uses stuff up.
I threw the potatoes into the microwave for 10 minutes, let them cool, cut them into wedges and put in a bag with olive oil, garlic granules, salt, pepper and some smoked paprika onto a baking sheet in the oven at 200 till crispy. The burgers will be cooked on the griddle – half an hour from start to plate 🙂
