Curry in a hurry…

Bit of a rush on today, in work by 7 am, finished at 1 – need to be a friends for 3 as it’s her Birthday, but more importantly she has a new kitten that I need to cuddle 😻

I rushed home and went straight to work on tonight’s Lamb Curry, I used the Left Over meat from Sunday’s Roast, the rest is staples really – 4 X finely sliced onions, chopped ginger, chilli and garlic to taste, salt, pepper, cumin, coriander and garam masala – I am not a precise cook, it’s bung it in and add stuff till it tastes ‘right’.

After cooking down the onions, garlic and ginger, I added the spices and fried them off a little with some chilli, then added the cooked lamb, Good stir, then added a tin of chopped tomatoes and half a can of water with a good squeeze of tomato puree and a sprinkling of chopped coriander stalks, salt and pepper.

This was thrown into a low oven for several hours of cat worship, after the worlds quickest shower, so I didn’t small too currified 😄

I know that there will be those who will throw their hands up in horror, ‘that’s not a curry’ – but although I would adore to learn traditional techniques, some days there is no time and a bowl of something tasty is all you need.

I will serve with Naan bread and poppadoms, a spoon of full fat Greek yoghurt with some fresh chopped coriander sprinkled over – all from Aldi….

Just back from friend’s house – and I have sever kitten envy, SO CUTE!!!!

A quick stir and dinners ready, 3 huge bowls full and 2 big portions for the freezer. 8 man sized meals from a £5 piece of lamb – very happy with that 😄
