A ‘Doing Day’

I don’t work on a Thursday, well, I say that, I don’t go to paid work is more accurate.

A typical Thursday, is catching up on washing, cleaning, bed changes etc around the home, whilst I bob up and down between wash loads and cleaning bathrooms etc I generally do the necessary paperwork for Hubby’s business, you know the type of things, invoices, quotes etc

This week, we have been given a HUGE bag of Runner Beans, by a neighbor, they will be sliced and frozen, another friend gave us a dozen eggs from their hens – as a thank you I have made a jar of Fresh Lemon Curd for each of them.

Dinner tonight was going to be home made quiche, but after a suggestion from a contributor to Moneysavingexpert.com, on the OS ‘what are you cooking for dinner’ thread, I shall be trying Impossible quiche – thank you Mila, I,m looking forward to trying it.

I have plenty of eggs, but will also use up a couple of rashers of bacon, diced onion, courgette and some flat leaf parsley.

This will be served with potato salad and green salad – we have a selection of icecream and fruit if anyone wants pud 🙂

Started by finely chopping the veg and 2 rashers of bacon (needed using) and frying off in a little olive oil till most of the water is cooked out of the courgette – I don’t want a soggy bottom 🤗


As you can see from the picture, I am boiling some new potatoes too – they will need to cool for the potato salad.


The main event…


This was really delicious, well worth the effort, and loads left for tomorrow’s lunches 😃

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie.
