Make your cake, and eat it.

Hi all,

Friday night is Date night, which basically means I don’t cook dinner.  We pop out to meet a few friends for a drink, then generally Hubby will get a takeaway or cook something simple, he is a very good cook, but rarely has the time.

We have family over on Sunday, my eldest son and his girlfriend, so I thought I,d make some cupcakes, busy tomorrow.  My eldest son is about 6ft 2, slim build and eats for England, as soon as he walks in the door, it’s a hug for mum, then straight to the kitchen to see what there is to eat 😏

I make the cake batter in the Kitchen Aid, I like to be able to see the consistency, I use an icecream scoop to put the batter into the cases, it makes them all even.

I make my own icing sugar in the Thermomix – 90 seconds at speed 10 and ta-da icing sugar at a third of the price of shop bought, then added butter, and in this case cocoa powder for butter icing, a quick wizz and then using a silicone spatula, put it in an icing bag with a star nozzle – I put it in the fridge for a while, just to firm it up a bit.

Vanilla cupcakes with chocolate butter icing and grated white chocolate – for my Baby Boy (22 yo and over a foot taller than me) – his favourites X

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
