It’s Chip’s Mum, but not as we know it….

I love Saturdays, lazy start, drinking coffee in bed, surfing the interweb for recipes and planning dinner.

My darling Hubby has been working his socks off this week, so I said I wanted to cook a special meal for him – what does his heart desire? (Apart from me, Obs) He wants steak, rare, with lashings of English mustard…

So tonight’s meal will be proper butchers steak, don’t know what cut yet, I will see what looks good, with a rocket salad and Polenta chips. Β Dessert with be Chocolate Fondants with clotted cream – Fondants SO easy in the Thermomix – not failed yet (now see what happens 😳)

For the Polenta chips, I stir 200g of polenta into a litre of boiling water, whisking as I pour, I add dried mixed herbs, about 100g of grated Parmesan and some salt and pepper, as it thickens add 30gbof butter, the pour into a clingfilm lined square tray and put into fridge when cool – it will go solid.


When it’s solid, cut into ‘chips’, then toss in olive oil and sea salt place on a baking paper lined tray and cook for approx 20 mins at 200 till crispy – yum πŸ˜€ These can be frozen at the cutting up stage, so I make loads and freeze what we don’t use.



And after…


Pudding, is quick as quick can be, but eyes like a hawk on the oven timer, as a few seconds over will result in chocolate sponge, not chocolate fondant with all that oozing centre. 10 minutes at 180 will do it, make sure you butter and dust the moulds with cocoa or they will stick.
