Guess who’s coming to dinner…

I love my children to bits, but one aspect of becoming an Empty Nester is the Sunday dinner conundrum….. How many are coming?

Some Sunday’s can be for as many as 8, some Sunday’s just the 2 of us. Β 2 of my children work shift,s and their hours can be changed at short notice, so flexibility is important.

Today, my eldest son and his girlfriend are coming over from the mainland, my Youngest will need to be fed after work at around 7pm, daughter will not be joining us, so a huge chicken salad is my answer, with a traditional sherry trifle for dessert.

Yesterday I started the Trifle, using some cupcakes that I left un-iced, drizzled generously with sherry, then tipped with a tin of old fashioned fruit salad (34p Aldi) and an Aldi jelly. This was popped into the fridge to set. Β Whilst this was happening, I made some fresh vanilla custard in the Thermomix, 8 minutes, 4 eggs, 500ml milk, a blob of vanilla paste, 30g of sugar and a tablespoon of cornflower – done – left in the jug to cool then put in top of the jelly.

 

All I needed to do today was whip some double cream to finish it off. It should be in a beautiful glass bowl to see all the layers, but I got rid of mine as it took up too much room in the cupboard, so it’s in a standard serving bowl 😒

First thing this morning I made some bread dough, left to prove for a couple of hours, whilst we watched the news in bed with coffee, I generally make ‘free formed’ loaves as I like to play πŸ˜€ 300ml blood temp water, a sachet of dried yeast, 500 g bread flour, a good glug of olive oil, a pinch of sea salt and a fist full of mixed seeds all into the Thermomix for 4 minutes on dough – done whilst making the coffee πŸ˜‡

Potato salad is next, then smother the chicken with butter, garlic and herbs with a halved lemon up its bum – loads of flavour and keeps it moist. A big chopped salad, and that’s about it.

I will keep the chicken carcas in the fridge and put it in the slow cooker tomorrow to make chicken stock for chicken noodle soup later this week – use it all πŸ˜‡

Add a cold glass of dry white wine and happy Sunday 😍
