Monday again, and a new month – how quickly is this year going?….
After finishing work at 1pm, I returned home to do a bit more on the VAT return for hubby, yes, I know, will the fun never stop…… 😏 So dinner tonight needs to be something that I can cook using my one remaining functioning brain cell. It is also a meal than I have taught to Youngest son for his Uni days😱
Chilli and Nachoes fit the bill, I finely chop some onions and garlic and gently fry, then fry off the minced beef till browned. To this, I add a couple of teaspoons of cumin, a squished Oxo cube, a pinch of salt and pepper, A finely diced chilli, a big blob of tomato paste, once cooked together I add a tin of chopped tomatoes and some sliced bell peppers and cook on a low heat for upto an hour to make a rich deep chilli.
I don’t add beans, as Hubby and youngest are not keen, but if it were just for me – bean me up Scotty !!!!! Youngest likes a Chilli to be fiery, so I have a bottle of hot sauce, which he can add to his portion. This will be served with chopped coriander and a big blob of Aldi Greek yoghurt – The Nachoes are such a cheat – a bag of cheap Aldi Tortillas with grated cheese, and serve.
I use a 750g pack of mince, and this should leave me with enough to create something later in the week with Leftovers 😇
Pud will be left over Trifle for those who want.
