Here we are at Friday again! The weeks are just whizzing by …
Today I have been a domestic goddess (ish) and cleaned our 2 bathrooms, steam cleaned the hard floors in the kitchen, hall and lounge – ironed (yes, really) and folded and put away our washing that I did yesterday.
Whilst having a well deserved coffee break, I fancied something sweet, so decided to make some Brownies, I base my recipe of nigella,s but without the £3 a bar chocolate, I use Aldi,s basic dark chocolate, which for 30+p is really very nice 🙂
Line a brownie tray with baking paper, I screw up my paper first so that I can get it right into the corners. Put the oven on to 180.
Using my trusty Kitchen Aid, I whisk together 6 free range eggs and 500g of sugar, and a splash of vanilla bean paste till its foamy and thick. Whilst this is doing its thing, I break up 4 bars of Aldi chocolate and put in a large glass jug, with 375g unsalted butter (I,ve used Aldi baking Marg today, as it’s just for us) chopped on top – this goes in the microwave for 2 minutes then mixed till blended.
Measure out 250g plain flour with a pinch of salt and turn off the mixer, then scrape the chocolate mixture to the eggs and whisk slowly till combined, as soon as it is dark and glossy, add the flour, not too high a speed or you will be covered in flour – as soon as the flour is combined, turn off and remove the bowl from the machine.
I use a silicone spatula to scape out the brownie batter into the tin and smooth out, at this point you could add stuff like chopped walnuts, or white chocolate chips, or dried sour cherries, mini marshmallows – anything you fancy really – I,ve gone for white chocolate, but it is still amazing without anything added.
Put the tin into the oven for 25 minutes – no longer or it will just be cake…. When you pull it out, it will have a pale brown crust and seem undercooked, as it cools it firms, but remains sticky in the middle – perfect 😊 Slice and store in a locked vault with a secret password as they will disappear like ice on a hot day 😇
Friday nights are date nights, so Hubby and I will pop out for a couple of drinks, then grab something to eat, depending on what we fancy 🍻
