Duck – going cheep..

Escuse the pun, but I got a little bargin recently, 2 duck Breasts down to £2.70, I snapped them up and put them in the freezer for a nice dinner for 2.

I will pan fry them and serve with potatoes dauphinoise and asparagus, a very rich meal, but utterly delicious.

I trim the duck breasts, and leave them in the fridge overnight, skin side up to dry out as much as possible, then score the skin, a light sprinkle of salt and pepper then skin side down into a cold pan.  Heat slowly allowing the fat to render down, when the skin is brown, I put into a hot oven for 5 minutes, we like them rare. I,ll save the duck fat for tomorrow’s roasties 🤗

For the potatoes, I slice some new potatoes into a pan, they need using up, then add half a cup of milk and half a cup of cream, a minced clove of garlic and some thyme – slowly bring this to the boil and simmer till part cooked, then I turn into a buttered ovenproof dish and top with grated cheese, Parmesan in this case, 10-15 mins in a hot oven and their done – the aspargus, I toss on olive oil, salt and pepper and griddle.

I use my Thermomix to grate the Parmesan, a whole lump, broken into large chunks takes 10 seconds, and I keep it in the fridge.

If my beloved still wants something, I will offer warmed chocolate brownie, with vanilla icecream – G&T is the drink of choice this evening 🤓
