We have had a huge joint of pork, bought from Aldi, sat in the freezer for ages, I should have cut it into 3 before freezing it, I move it around most days to get to something around it.
I have decided it is time to deal with this little piggy – I will cut the joint into 2 parts, one to be roasted for today’s meal with all the usual suspects, roast potatoes, sliced runner beans (gift from neighbor) I will use the cauliflower cheese from last week. I will make some apple sauce and if I cook it right, should have some crackling – the best bit in my opinion 🤗 As there will only be 3 of us for dinner, the remaining pork will be sliced and frozen for another day.
Whilst I par steam the potatoes in the Thermomix varoma, I will make some tomato and red pepper soup for lunches through the week, it uses red lentils as a thickening agent, they are ground for 10 seconds and added back in after peppers, onions and garlic are whizzed and cooked down for 5 minutes, then add the lentils, a tin of tomatoes, 400g of veg stock and a teaspoon of smoked paprika (optional), cooked for 10 mins – lunches done, no time, no mess, and cheap – what’s not to love 😄 Poured into microwaveable soup mugs and popped into the freezer, ready for early morning grab and go.
The second piece of pork will be put into the slow cooker for tomorrow’s meal – watch this space 😄
