Taco time…

Another Monday, another day at the Giggle mines (work), as I said yesterday, we had a HUGE pork joint that I defrosted and cut in two.  I made 3 large meals yesterday (roast pork), and froze enough for another 3 meals for another day.

The second piece of pork, sat, with finely sliced onions, in the slow cooker for most of the day yesterday.

When end it was soft and tender, I shredded (pulled) it using two forks, then mixed in some Aldi smoky BBQ sauce, as I had some that needed using up.

Last year, I bought some Taco moulds on a whim, so will make Taco ‘bowls’ and put the pulled pork in them, rather than rolls, and will serve with coleslaw and salad.

Our lovely neighbor’s gave us a Marrow on Saturday, it reminds me of dinners in the 70’s with watery marrow and greasy mince, and I just can’t eat it as a stand alone vegetable.

I peeled it, chopped it into rough chunks, added the grated zest of a lemon, and the juice, chopped a large piece of ginger, and a chopped up Granny Smith Apple, core, skin and everything and added 500g of sugar all into the Thermomix – 20 minutes later Marrow and Ginger Jam – a jar for us and one for the neighbour’s – bonus 🤓
