Fishy Friday..

Friday night is ‘date night’ in our house, this doesn’t mean candles and romance necessarily, it means Hubby and I spend some time together and generally I don’t cook.

Tonight however, is Fireworks night for Cowes Week, and literally thousands of people flock to the Parade to see them, the roads for miles are blocked, so we are staying at home and will watch them from there.

I wanted to make something fuss free and quick, and most importantly something from the stocks I already had. I have decided to make Cod baked in Tomato, simple and tasty, with Foccacia bread.

The cod dish couldn’t be more simple, a tin for chopped tomatoes, chopped garlic, sliced onion, sliced bell pepper, a handful of olives, salt, pepper, roughly chopped rosemary and a good glug of olive oil – that’s the sauce bit, then lay frozen cod fillets (Aldi ones are thick and great value) on top and chuck in the over for 30 mins at 200.

The Foccacia dough is made in the Thermomix – 300 ml warm water, a sachet of yeast, 500g of bread flour, a very big glug of olive oil, salt pepper and Wizz on dough for 3 minutes. Β When done, leave to rise for an hour, then turn out and swish into an oiled baking tray, making sure it’s even, leave for 30 mins to rise again, then using your finger tips create deep dimples in the dough, sprinkle over chopped rosemary, slices of garlic, poke some into the dough, then brush with olive oil and sprinkle with sea salt. 30-40 minutes in a hot oven and it’s ready. Β I live to soak up the juices of the cod dish with the bread, accompanied by a glass of succulent red – bliss…
