Tonight will be just the 2 of us, the kids are all off doing their own thing, so we will have something special.
A few weeks ago, my dear hubby bought 5kg of large frozen prawns, he is a generous man X Tonight I will make a classic dish of Gambas Pil Pil – finger licking perfection.
The prawns could’t be simpler, a good glug of olive oil in a large pan, add several cloves of garlic, finely sliced, and some flakes of dried chill, and a heaped teaspoon of smoked paprika, gently fry till the garlic starts to brown, then add a good glass of sherry and cook down by about a third, then add about 50g of salted butter and stir till melted. Add the prawns, ours are cooked frozen, so they have been defrosted and need cooking till fully warmed though. Add the juice of a large lemon and a large handful of chopped parsley, stir and serve with crusty bread.😋
The bread will be (again) made in the Thermomix, today will be a Batard, a short, fat baguette, 300ml hand warm water, add a pack of dried yeast, a teaspoon of sugar then mix speed 1 for 3 mins at heat 37, till the water mix starts to foam then add 500g of bread flour and a good pinch of sea salt – no added fat, not for French bread…. Mix on dough setting for 3 mins and leave to rise for at least an hour. When risen, turn out, knock back, and turn the dough, folding it under its self, turn and fold under and on till you get a smooth top, shape into a rough rectangle with pointy ends approx 10 X 3 and leave to rise again on an oven sheet – turn the oven onto 200 and heat for at least a half hour, with a clean tray at the bottom of the oven. When the dough has risen again, I ‘slash’ it down the middle with a sharp knife,one quick slice. You can buy a tool called a Lame, which is is the professional cutting tool, but a good thin bladed knife works well.
Now this is the important bit, as you open the oven door, throw a half cup of water into the tray, put in the bread and cook for 50 mins to an hour – the water creates steam which will give the bread a really lovely crust and colour.🤓

I also made a Traditional Victoria Sponge – Mary Berry Recipe, beaten all in one in the Kitchen Aid and baked at 180 for 25 minutes – I use raspberry jam in the middle, no cream or whipped cream, for me it makes it too sweet, but a little sprinkle of icing sugar on top 🙂 Cup of tea and a slice of cake instead of lunch 😋
