Bella Lasagne… No Jars

Sunday again… Time is flying, not long before my baby boy goes off to Uni ๐Ÿ˜ž

He is working a 12 hour day today, 9-9, great for the Uni fund, but tiring, so I will make something that he can heat up later.

Dear Daughter is also here, on her own, ย a rare treat, we love her boyfriend, but is is nice to have your children to yourself sometimes ย – she will be eating here too

A crowd pleaser today, Lasagne.. ย Very easy, and no jars to be seen ๐Ÿ˜‡

I start by chopping onion and garlic in the Thermomix, you can of course use a knife ๐Ÿ™ƒ, but I will be making the white sauce in the Thermi, so I might as well use it for as much as possible.

I lightly fry off the garlic and onion in olive oil, then add 750g of minced beef, turn till cooked off, if the mince is ‘fatty’ drain off the excess oil. I then add a tin of chopped tomatoes and a large splodge of tomato puree, I sprinkle and oxo cube and a good teaspoon of mixed herbs in, and a sprinkle of salt and pepper and using the tin from the tomato, add half and half red wine and water to fill the tin then add to the pan. ย A good stir then simmer down till thick and unctuous.

Whilst this is cooking add 500ml milk to the Thermomix jug, 50g plain flour, 50g butter, salt, pepper, 100g cheddar and a heaped teaspoon of English mustard powder, I think this brings out the flavour of the cheese – turn the Thermomix onto speed 4, heat 100 for 7 mins – hold onto it till the cheese breaks down, it will do a little dance to start with ๐Ÿ˜‚

Take your lasagne dish, and layer up using meat mixture, a layer of lasagne sheets, white sauce and again till the ingredients are gone finishing with a layer of white sauce, then sprinkle with Parmasan and bake in the oven at 180 for 30-40 mins.

Serve with salad and garlic bread (left over Foccacia here)

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. We live on the beautiful Isle of Wight, Hubby and I were born here, and just love our home. As I hurtle towards 50, my life as a full time (working) parent is coming to an end, with my eldest 2 kids living their own lives, and my youngest who started University in September. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
