Meat Free Monday

I struggle on a Monday Morning, up and at work for 7am – bleughhhh …

Today is a particular treat, as I have to finish work then finish off the VAT return for Hubby…

Needed food to be simple but feel like a treat for finishing the dreaded VAT return.

I found a recipe from John Whaite for Mushroom and Sage Gnocchi http://www.johnwhaite.com/5-ingredient-recipes/2016/6/1/mushroom-and-sage-gnocchi

Looks easy, but delicious – and I have all the ingredients – sold….

I start by frying some finely chopped onion (didn’t have banana shallots) in butter, salt and pepper, then added chopped ‘mixed’ mushrooms, oyster and shitake in this case, till golden brown, chopped sage leaves, then add a glass of white wine, cook down till sticky, then empty into a bowl and keep to one side – then fry the Gnocchi till golden brown on both sides, I used ready made as I had some in the cupboard, but easy to make. Then add the mushroom mixture to the crispy pillows and plate up. Add a little oil to the pan, and fry some sage leaves till crunchy, add as a garnish. And a sprinkle  of Parmasan – I would have loved some crumbled blue cheese, but didn’t have any 😞

20 minutes from cupboard to plate – now that is fast food……
