Cookie Monster…

Our son says thank you to everybody that passed their best wishes and congratulations – he said he will be signing autographs now that he is famous 🙄

Friday again… Date night tonight, so Hubby is in charge of food, due to his heavy workload, it will probably be a cheeky takeaway🙃 No cooking for me, so I am not moaning 🍱 🍷🍻

I call my hubby a Cookie Monster, as he has all the willpower of a new born kitten when it comes to biscuits – so I thought today, I would make some chocolate chip cookies, in my Thermomix, of course – I don’t make these too often as they are very tasty and don’t last long…🍪🍪 I use this recipe, but double up and use less sugar  http://www.recipecommunity.com.au/baking-sweet-recipes/only-best-chocolate-chip-cookies-ever/17781

I started by cutting up 250g unsalted butter and added 150g of white sugar and 150g of light brown sugar and a large teaspoon of vanilla paste, this was mixed at speed 4 for 1-2 minutes till combined, then, when still running add 2 eggs and mix at the same speed for another 2 minutes, then add 500g of self raising flour, a pinch of salt and mix on dough for 2 mins, then open, scrape down the bowl, add 200g of chopped plain chocolate (I used Aldi 30p dark chocolate) and mix again on dough for 1 minute.

I then turned out, split the dough into 2 equal portions, and roll into a sausage shape about 1.5 inches thick and refrigerate for at least an hour – this can be frozen at this stage for emergency cookies 😜🍪

Put the oven on to heat to 180.

When firmed up, I cut each sausage into approx 12 equal parts and roll each part to make a large marble (who remembers Dobber’s) you can make them to whatever size you want, I sometimes make larger ones to make into icecream sandwiches – naughty, but ohh so nice…..

Bake for 10-12 minutes, I leave them in for 10 as we like them crunchy on the outside and moist in the middle 😝

You can make these the traditional way, they taste just as good, just takes longer to mix.

The weather is supposed to be pretty rubbish over the weekend, so a bit of comfort food will be needed – thinking cap on, change of menu I think……
