Perfect Prawn Risotto..

My lovely Hubby has taken the day off to rejig some bits of the house, he is a builder, and much like the proverb of the Cobbler’s children with no shoes, I have to be patient for things to be done at home ๐Ÿค“ย As he has been in and out of the kitchen like a Jack Rabbit, I didn’t want to get in his way, so another favourite ย Thermomix recipe comes to the fore.

A delicous creamy Prawn risotto, with Prawn’s that my lovely Hubby caught this morning – 7am swimming in the sea 7pm filling our tummies – that’s what I call fresh food ๐Ÿ˜ Using the heads and shells for the stock too ๐Ÿค“

I start with grating the Parmasan, speed 10 for 20 seconds a whole wedge is done ๐Ÿค— a medium onion, peeled and quartered and a fat clove of garlic peeled, all thrown in the Thermomix bowl and chopped on speed 4 for 30 seconds till finely chopped, scrape down the bowl, then add a good knob of butter and some salt and pepper and cook for 1 minute on heat 100 reverse speed 1.

Place the ‘butterfly’ into the bowl and add 200g of Aborio rice, sold at Aldi on special for pence, and stir on reverse 1 for a few seconds till the rice is covered in the buttery sauce, then add a glass of white wine, the grated zest of a lemon and cook for a further minute on heat 100 on reverse speed 1.

Add 450ml of stock, I used prawn, ย but vegetable, fish or chicken would be fine. Then cook for 7 minutes, heat 100, reverse speed 1.

Add the cooked prawns, a good blob of butter and 70g of grated paramasan cheese, and the juice of a lemon, mix for a further minute on reverse speed 1.

Thats’t it – ready – it is such an easy dish to make in the Thermomix you will make it a lot ๐Ÿ˜‡

Note – If the risotto is too thick, add a little more stock, or if too runny, cook for another minute or so – this is personal taste – we like our quiet runny

I also made some Caramel Fudge for a colleagues birthday tomorrow, Ohhh to be 25 again and know what I know now ๐Ÿ˜‡

I use this recipe – will just post a final stages pic – it’s edible glitter spray, I do try not to kill people with my food ๐Ÿ˜Ž
