What a falafel… Meat Free Monday

Meatfree Monday is here, a bonus as its a Bank Holiday….

Really fancied a Burger so thought I would give Falafel Bugers a go, Brioche Buns, peashoot salad, Mint yoghurt dressing and sweet potato fries 🙃

I start with a can of chickpeas drained and dried off, tipped into the Thermomix (any food blender will do) add a handful of flat leaf parsley (I used corriander, as that’s what I had), 2 tablespoons of plain flour, a teaspoon of cumin and corriander, half a teaspoon of chilli powder a pinch of salt and pepper, blitz for a few seconds on speed 4, scrape out the bowl and kneed the mix into 4 burgers, (I did 3 as we are pigs) dust with plain flour and when ready fry in oil for a few minutes on each side.


For the sweet potato fries, peel, and chop into ‘chips’ toss in olive oil, salt and pepper and I like a pinch of smoked paprika, spread out on a baking tray and cook for 30-40 mins at 200.

For the dressing, I mix 2 heaped tablespoons of thick Greek yoghurt, deseed, peel and chop around 3 inches of cucumber, shred a 6 or so mint leaves, a squeeze of lemon juice and a pinch of salt and pepper, mix together – done….


Lightly griddle the cut brioche buns – love the crunchy texture, add the burgers, the salad, top with the dressing – add the sweet potato fries and maybe a spoonful of coleslaw 😜
