I need to have a bit of a fridge tidy today, lots of ‘bits’ that need using up, so I will make a Cous Cous salad and some Marinated Chicken Wings, which have been hiding in the freezer for a while.🍽
I will also make a quiche, as a friend has given us lots of eggs, I have about 2 dozen now 🤗 Youngest is working for the next 4 days, so he will take most of it to work.
I start by making the pastry, it only takes seconds in the Thermomix, add 200g plain flour, 100g butter (I use half baking butter, half lard) and a pinch of salt to the bowl, mix on speed 6 for 10 seconds, then add upto 60ml iced water (add half then drip in till it binds) wizz on speed 6 for 5/6 seconds – I like to rest it in the fridge to prevent shrinkage.
I will fry some chopped spring onion, 2 chopped rashers of streaky bacon, mushrooms, some red pepper to put in it and will ‘decorate’ with sliced tomato which Youngest will no doubt pull off as he doesn’t like it 🙄
I found a sachet of Aldi Oyster and Spring Onion sauce in the cupboard, so I will use that as the marinade for the wings, I chuck it all into a freezer bag with the wings and ‘mush’ together and leave in the fridge for a couple,of hours – when ready, I lay out the wings of a lined baking sheet and cook at 180 for a half hour or so, turning then half way, so they get all dark and sticky – yummmm….
The Cous Cous salad is SO easy, a cup of Cous Cous, soaked with some Marigold veg stock. I cover the bowl with cling film cover in boiling water, when swollen and cooled, tip into a larger bowl and fork through to loosen the grains, to this I add chopped Spring onion, chopped pepper, seeded, chopped tomato, chopped cucumber and chopped herbs, the juice and zest of a lemon and a good glug of olive oil, season to taste. I always make loads of this, as it is great as a packed lunch too. Served with a big spoon of Greek yoghurt and a drizzle of HM chilli jelly.
