Tonight we are going out to dinner to celebrate our Anniversary, with our Best man and his wife, we are really looking forward to it as we havnt got together for ages.
I have decided to take youngest son out for breakfast as he goes away to Uni in 3 weeks, and I,m trying to spend a bit of Mum time with him, we we also go and buy some bedding for his new Uni house.
I will make some scones and Stawberry jam for this afternoon, just right with a cup of tea 😜
I had 3/4 of a punnet of strawberries in the fridge left over from last weekend Pavlova, so using up too.
The Strawberry Jam is easy peasy – 250g of stawberries, 1 Granny Smith or cooking Apple quartered, 125g sugar and a splash of vanilla bean paste – all into Thermomix bowl Varoma heat, speed 1, 20 minutes – done, no pot stirring, dribbling onto cold plates, just woosh 😇 I use this recipe. http://www.recipecommunity.com.au/sauces-dips-spreads-recipes/1-punnet-speedy-strawberry-jam/110790
The scones, again, take seconds, I wait for the jam to cook, empty into a sterilised jar, then add hit water and a tiny squirt of washing up liquid to the Thermomix bowl and wizz on speed 10 for a minute with the MC in and it’s clean enough for the scone mix – saves washing up 😝
I put 400g of plain flour, 5 teaspoons of baking powder in the bowl and wizz on speed 4 for a few seconds to combine (you can of course use SR flour), add 30g of butter and wizz again on speed 4 till ‘breadcrumb’ consistency then add 30g sugar, one egg, 125ml plain yoghurt, 125ml milk and wizz for a few seconds till just combined.
Turn out onto a floured surface flatten and cut out your scone shapes, I try to touch the dough as little as possible so not to overwork it – nobody wants tough scones…. Put onto baking sheet, I brush with a little milk, try not to let it dribble down the sides or it can stop them rising properly, I use my (clean) fingers.
baked at 200 for 10-15 mins till golden brown – cool and eat….
