Bit of a busy one today, so need something tasty but quick.
I have a fair it of the brown rice left over from yesterday and wanted to use it up pretty quickly, so have plumped for Kedgeree – it’s an old Anglicised breakfast dish of curried rice and smoked haddock thought to have been bought home by British Colonials from India – Yummy..
I am using a curry paste again, I got several when Sainsburys had their own brand on offer, the are a good standby and even quicker than using the saintly Thermomix 😇
I do use the Thermomix to steam the smoked haddock 😆
Take on medium sized onion and finely dice, add to pan with a tiny bit of oil till translucent, I added 2 deseeded, chopped tomatoes, then added a heaped tablespoon of curry paste, when the paste is loosened and hot, add a little water, maybe half a cup, be careful it doesn’t spit when adding.
I then add the cooked rice and flaked, cooked smoked haddock. When fully combined, add chopped parsley and a good squirt of lemon juice and stir through.
Whilst all this is happening, you should soft boil an egg per person, and leave to partly cool to hand held temp, peel and cut the egg in half, and put on top of the kedgeree when serving, the yolk should be runny. I had run out of eggs – boooo….
