Pizza ‘D Action..

Food shopping day today, sorted the fridge out yesterday, and have some things to use up – mushrooms, pepperoni, bell peppers, cheese and a pot of HM pizza sauce, so it had to be pizza…. I have a confession to make – I don’t really like Pizza very much, but everyone else does, so I do make and eat it. Fair is fair.

I start by making a basic pizza dough in the Thermomix, it’s pretty much the same as Bread dough 500g, 300g warm water, a sachet of yeast and a good glug of olive oil.  Put the water and yeast into the jug and ‘cook’ on heat 37, speed 1 for 2 mins, then add the flour and olive oil and mix on dough setting for 3 minutes, leave to rise for at least an hour.

Whilst this is rising, finely slice the mushrooms, bell pepper, tear the mozzerella up and anything else you are using.  Get your sauce out and ready to go, heat the oven to the maximum.

When the dough is risen, cut into 4 equal pieces, and roll out into a circle – we like them thin as possible, if you want it thicker, cut dough into 3.

I sprinkle my baking sheets with polenta before placing the pizza base onto it, then spoon the sauce onto the base, not too much, then scatter, your toppings, a sprinkle of oregano – go mad 😜

15-20 mins in a hot oven and you should have a light crispy pizza 🍕

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. We live on the beautiful Isle of Wight, Hubby and I were born here, and just love our home. As I hurtle towards 50, my life as a full time (working) parent is coming to an end, with my eldest 2 kids living their own lives, and my youngest who started University in September. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
