Happy Friday 🍾 We’ve made it through another week… Out with Hubby tonight for a few drinks with friends and will pick up some food on the way home 😍
The weather is cooling and I like to make something warming for work lunches, so soup and crackers are on the menu for next week.
I’m going to make some seeded crackers, I love these with soup for work, very cheap to make and taste better than anything you can buy. I use this basic recipe and amend to taste. http://thelittleplantation.co.uk/blog/bread2feb15
I half the recipe as it makes loads, preheat the oven to 150 and get a baking sheet ready, add 150g plain flour, 75g mixed seeds (I use the prebagged mix from Lidl), 25ml olive oil and 175ml boiling water, put it all into a bowl with a good pinch of sea salt and mix to form a ball.
When combined, tip out onto a sheet of grease proof paper and put another sheet on top, squidge down flat and roll very thin then take off the top sheet and slide the whole thing onto a baking sheet, put in the oven and leave for an hour to hour and a quarter – let them cool and ‘snap’ onto big shards – perfect for dipping into thick Autumn soups – my fav is Butternut Squash and ginger 😋
I deseed and roughly chop a small butternut squash, leave the skin on and tip into the Thermomix bowl along with a peeled and quartered medium size onion, a peeled knob of ginger to taste, a teaspoon of marigold veg stock and a litre of water, set on heat 100 speed 2 for 20 minutes then blitz for 30 seconds on speed 7 for a smooth soup, taste and add seasoning to taste. You can toast the seeds and add as a garnish – yummy..
I pour into plastic soup mugs and put straight into the freezer and grab one each morning for work along with a few crackers – cheap, simple easy work lunches 😇
