My lovely Hubby has been working like mad this week, and today he is working on our house – to show him how much I appreciate him, I am cooking him a ‘Man Meal’. The whole works 😇
I bought myself a little present, I havn’t had one since the ’80’s – a deep fat fryer, just a little one from Lakeland it was half price 😇 I have been hankering after squid, weird I know, but I do love Calamari…. http://www.lakeland.co.uk/18912/Lakeland-1-5L-Compact-Deep-Fat-Chip-Fryer
Starter – Calamari and Sweet chilli Mayo
Main – Steak, Triple cooked chips, HM Onion rings, salad and Peppercorn sauce 🤗
Dessert – Lemon pots
I start with the dessert, very simple, add a pot of double cream, a tin of condensed milk, mixed together then add the grated zest and juice of a lemon, whisk together and watch as it thickens (it’s like magic) – then pour into dessert glasses and put in the fridge
The Calamari is simple, slice the body of the cleaned squid into rings, we love the tentacles too, I then toss the squid in mixed flour and smoked paprika and fry for a few seconds at 150 heat – the Sweet Chilli Mayo, is just Homemade Sweet Chilli Sauce mixed into Homemade Mayo
Cut the potatoes into chips and steam for 10 mins, till part cooked, and put into the freezer for an hour, then part fry for 5 mins setting the oil heat at 170, drain and freeze again for an hour – turn the oil upto 190 and fry for 10 mins – triple cooked chips 🤓
The onion rings are just onions cut into thick rings and dipped into a batter made from 100g half and half plain flour and corn flour, a teaspoon of baking powder salt and enough iced water to make a batter the thickness of double cream – slowly dip into the hot fat using a set of tongs, a few at a time till brown and puffy, set aside to drain.

Cook the steak for a few minutes on each side on a hot griddle, rub the steak with oil and sprinkle with pepper before griddling, we both like rare steak. The peppercorn sauce I cheated and bought it ready made 🤗
This is an extravagant treat, but much cheaper than the equivalent meal out – I might have a little lie down now 😝
