Meat Free Monday again, and I wanted to continue with the use it up theme.
In the freezer I have half a pack of Filo pastry and the fridge holds half a soft Goats Cheese and some cooked vacuum packed Beetroot – so Beetroot and Goats Cheese parcels with Potato Salad and Rocket Salad.🤗
I take 2 leaves of Filo pastry, taking one at a time, paint them with melted butter and put one on top of the other, then add a couple of thick slices of beetroot, one next to the other and top with 2 thick slices of Goats cheese, I like to add a bit of sweet chilli sauce, but caramelised onions works well too, or just leave it plain, then pull the edges of the pastry together to make a parcel shape, brush with butter – put into a preheated oven at 180 for 15-20 mins.
The potato salad is just sliced cooked new potato, sliced spring onions, mixed with Mayonaise, a teaspoon of grain mustard, mix together till all covered.
Plate up and serve with side salad – Simple and SO tasty, one of my favourite veggie meals 😇
