I may have mentioned, but my youngest is off to Uni this weekend ๐Ÿค Busy ensuring he has everything he needs to start him off, so need something quick again tonight.

I,ve done the weeks shop at Aldi, and even with a few bits for youngest, I only spent ยฃ40 and that includes 2 bottle of their amazing New Zealand Sauvignon Blanc – I do like a glass of an evening ๐Ÿ˜‰

Dinner tonight will be Spaghetti Bolognaise ๐Ÿค“

I start but peeling and finely chopping an onion, and a crushed, chopped clove of garlic into a pan and gently fry, then add 400g of lean minced beef to the pan, breaking it up and brown off, ย then add a Tin of tomatoes and half a can of water, a good squeeze of tomato puree, plenty of dried mixed herbs, stir again, leave this to cook out for a few minutes, turn the heat as low as possible and leave for a half hour, stirring occasionally

Whilst this is bubbling away, I bring the Thermomix jug full to 2 ltrs full,of hot water and heat to 100, with a good pinch of salt, then add enough spaghetti for 3 and put it on reverse speed 1 for 10 mins – love watching this spin round ๐Ÿ˜‹

When the meat sauce is thickened and still fairly wet, turn off the heat, drain the spaghetti and plate up, with a huge sprinkling of grated Parmasan – proper comfort food ๐Ÿ˜‡

The sauce can be frozen in portions for easy meals when you havnt got time, add a bit of chilli and some kidney beans and you have a chilli – easy peasy ๐Ÿค—

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. We live on the beautiful Isle of Wight, Hubby and I were born here, and just love our home. As I hurtle towards 50, my life as a full time (working) parent is coming to an end, with my eldest 2 kids living their own lives, and my youngest who started University in September. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
