Spaghetti Bolog-daze..

I may have mentioned, but my youngest is off to Uni this weekend 🤐 Busy ensuring he has everything he needs to start him off, so need something quick again tonight.

I,ve done the weeks shop at Aldi, and even with a few bits for youngest, I only spent £40 and that includes 2 bottle of their amazing New Zealand Sauvignon Blanc – I do like a glass of an evening 😉

I am trying to make some of his favourite dinners, and hoping that he may so a vague interest in how they are constructed….

Dinner tonight will be Spaghetti Bolognaise 🤓

I start but peeling and finely chopping an onion, and a crushed, chopped clove of garlic into a pan and gently fry, then add 400g of lean minced beef to the pan, breaking it up and brown off,  then add a Tin of tomatoes and half a can of water, a good squeeze of tomato puree, plenty of dried mixed herbs, stir again, leave this to cook out for a few minutes, turn the heat as low as possible and leave for a half hour, stirring occasionally

Whilst this is bubbling away, I bring the Thermomix jug full to 2 ltrs full,of hot water and heat to 100, with a good pinch of salt, then add enough spaghetti for 3 and put it on reverse speed 1 for 10 mins – love watching this spin round 😋

When the meat sauce is thickened and still fairly wet, turn off the heat, drain the spaghetti and plate up, with a huge sprinkling of grated Parmasan – proper comfort food 😇

The sauce can be frozen in portions for easy meals when you havnt got time, add a bit of chilli and some kidney beans and you have a chilli – easy peasy 🤗

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. We live on the beautiful Isle of Wight, Hubby and I were born here, and just love our home. As I hurtle towards 50, my life as a full time (working) parent is coming to an end, with my eldest 2 kids living their own lives, and my youngest who started University in September. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
