Well it’s the end of another working week, and a bit errrm ‘moist’ it’s been tipping down all night, nice to be cool though 😀
I am making a couple of ‘crowdpleasers’ for youngest to take with him to Uni tomorrow, a load of salted caramel fudge, and a batch of brownies.
The fudge is based on this recipe for the Thermomix – http://www.recipecommunity.com.au/desserts-sweets-recipes/easy-caramel-fudge/89900 I don’t use the glucose syrup, I just replace with golden syrup.
I start by breaking up the 200g of White chocolate (30p bars from Aldi), put into the Thermomix bowl and blitz for a few seconds on speed 10, tip out and set to one side.
Then add a tin of condensed milk, 160g of light brown sugar, 120g of chopped butter, 125g of golden syrup and set on heat 100, speed 3 for 8 minutes, then 20 mins, at Varoma heat on speed 3 – add the grated chocolate and mix on speed 4 till combined. Whilst this is cooking, line a small baking tray or any shaped medium size dish with cling film and working quickly, tip the fudge into the lined tray, scrape out the bowl, even out the fudge and sprinkle with good quality sea salt (optional) – set to cool for a couple of hours, when set cut into small cubes, this is s smooth, rich fudge, that you can add anything to to jazz it up, one of my kids favorites Jelly Beans fudge 😋
The brownies are from Nigella http://www.food.com/recipe/nigella-lawson-brownies-32053 – I havnt added nuts, as it is for a group of people I don’t know, and want to avoid allergy issues.
Put the oven on to heat to 180 and line a large baking tray with baking parchment, I use my Kitchen Aid, and beat 6 eggs and 500g of sugar and a blob of vanilla paste till thick and glossy, whilst this is whisking away, I chop 375g butter and 375g dark chocolate (again Aldi cheap choc, it’s brill) and microwave it for 2 mins, stir to combine together, add the chocolate mix to the egg mix and slowly whisk till combined then add 225g plain flour and mix till just combined – do not overwork. Tip the mix into the lined tray and cook for 25 mins, no more as it carries on cooking when taken out of the oven – then leave to cool, cut and enjoy the squidgy goodness…..
