Boozy Porker… Autumnlicious.

No, not me…. Dinner…. Pork Steaks with Creamy, Herby, Cider Sauce, with Mashed Potato and Green Beans.

imageI had a pack of Aldi Pork steaks in the freezer, from when they were on special a while back, and a lonely bottle of their Cider. I also have too many baking potato’s that were in the I super 6….

imageI start by prepping the veg for the sauce and chopping 2 baking potato’s, skin on, into a pan of salted boiling water, boil till soft, drain and mash with butter and a splash of milk – I prefer to use the beater in my kitchen aid to do this, but just so long as it’s smooth and light.

imageWhilst this is boiling away, I lightly oil a chefs pan (frying pan will do) and brown off your Pork steaks, when browned on both sides, take out to one side for a while.

imageIn the pan, add to the juices a finely chopped small onion, half a stalk of celery, some diced carrot, some fresh Thyme, a sprinkle of black pepper and fry till the onion and carrot start to soften.  At this point I add half a bottle (approx 250ml) of dry cider, and a crushed chicken stock cube.  Stir together, peel, core and slice a green eating apple into 8, ready to add when the sauce has reduced by half, you want the apple still with texture.

Just before serving add a big blob of double cream and season to taste. Add the pork steaks back to the pan to finish cooking for a few minutes, whilst you plate up with your mash, lay the chops on the plate and smother in the sauce – add whatever veg you like – ta-da 😍

As a bonus I made a Chocolate, self saucing pudding in the Thermomix, SO easy and SO good – I use this recipe

No photo’s of pud – sorry 🙂

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. We live on the beautiful Isle of Wight, Hubby and I were born here, and just love our home. As I hurtle towards 50, my life as a full time (working) parent is coming to an end, with my eldest 2 kids living their own lives, and my youngest who started University in September. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
