Using Flat Iron steak, very trendy, very tasty…. A pair of Flat Iron Steaks from Market Porter – look lush….
Saturday Night, I like to treat hubby – we like steak, and when I get the chance to buy some cheaply, But good quality, I load the freezer.
I thought I would try something a bit different, griddled steak, Chimichurri sauce and HM flat breads, with rocket salad.
I start by making the flat bread dough in the Thermomix, I have given the recipe before, but for anyone who missed it http://www.recipecommunity.com.au/breads-rolls-recipes/roti-chapati-or-wrap/36679
It is such an easy recipe, but does take some time to cook them, as, obviously you have to roll and cook them one at a time, it is SO worth it as they are delicious and freeze well too.
The Chimichurri sauce takes a minute in the Thermomix (or any blender) I throw in a bunch of flat leaf Parsley, a bunch of corriander, a diced small red onion, 2 cloves of garlic (adapt to to taste), a few chilli flakes (again more or less to taste), 2 tablespoons of red wine vinegar, juice of half a lemon, salt pepper and good olive oil enough to loosen to desired consistency – put it all into the Thermomix bowl, except for the olive oil, wizz on speed 7 for 10 seconds, scrape down the bowl and add a good glug of olive oil and mix again on speed 4 adding oil to make it as loose as you like it – taste at this point and add seasoning to taste and put into a screw top jar and put in the fridge – this will last a week or so.
I have also finely sliced half a red onion, and marinated it in red wine vinegar and a touch of sugar, to make a very simple pickle – adds a bit of crunch.
The flat iron steaks, I marinate in olive oil and garlic with a sprinkle of salt and pepper, and when ready put into a heated griddle, a few minutes on each side then take off the griddle and leave to ‘rest’ for a good 10 minutes, then slice into thin’ish slices ready to build your wraps…… Fresh Rocket, steak, sauce and finely diced red onion – Such great flavour combinations.
