Longgg, Slowww, Sunday Stew

The weather is yuk, big yuk, raining and cool – we are going to have a lazy Sunday.

Coffee in bed with Hubby and Andrew Marr (A TV programme for those not of these shores😉) then prep a beef stew to sit in the oven for aaaages.




I have a pack of Aldi cubed beef, which I put into a freezer bag and toss in seasoned flour and brown off in a cast iron pan with some roughly chopped onion and crushed garlic, just one clove.


Once this is done, add chopped carrots, halved button mushrooms and halved new potatoes (that’s what I had in the fridge) I also added half a bag of home frozen leeks I found in the freezer – I then add a litre on water, a crushed beef oxo cube, a good shake of Worcestershire Sauce, a parcel of fresh herbs, Rosemary, Thyme, Bay leave tied together for easy removal and a big pinch of black pepper – I leave the salt till the end, then adjust to taste.  This will stay in a low oven for 4 hours.

My lovely Hubby buys me some very random presents, once of which was a massive roll of muslin – I use it for loads of things – who needs flowers 🤗

Once this is in the oven, I make some bread in the Thermomix – 300ml warm water, a pack of dried yeast – mix for 2 mins at heat 37 speed 1 – then add 500g bread flour, a glug of olive oil and a pinch of salt and mix on dough setting for 3 minutes, I added a ha full of mixed seeds a minute before the mixing finishes – then leave for an hour to rise.

imageTip out, knock back, shape and leave to rise again for a min of 30 minutes then into a preheated oven at 200 for 40 minutes – throw a cup of water into the oven (oven tray at bottom) to create steam and a crusty loaf – Mmm – perfect for dunking… I have made 2 smaller free form loaves, if you are making a large on increase the cooking time to 50-60 mins.
