Meat Free Monday – Mediterranean Roasted Vegetable Pasta

I wanted to make a veggie Lasagne, but Hubby turned his nose up at it, he finds lasagne in general ‘heavy’.

On my shopping trip to Aldi, I bought a tray of ready cut Mediterranean Vegetables, not something I have thought of buying before, but now it’s mainly just the 2 of us at 89p it works out cheaper than buying the separate veg.


I am making the sauce in the Thermomix, but roasted it off in the oven dressed in olive oil and added garlic when I made the stew yesterday.


I put a good glug of olive oil into the Thermomix bowl and added the cooked garlic cloves, salt and pepper and mix on speed 4 for 3 or 4 seconds, then add the rest of the cooked veg, and a tin of chopped tomato’s, a big squeeze of tomatoe puree and a good pinch of dried oregano – set to cook at heat 80, speed 1 reverse for 7 minutes, check, taste and continue to cook till it thickens (approx 10-12 mins) – a quick blitz to break it down on speed 4 for 2 or 3 seconds and the sauce is done.


I also cook the pasta in the Thermomix, heat 1.5 litres on salted water to heat 100, then add the pasta and cook for 10 minutes till tender – I would have added basil to the sauce but didn’t have any in. I LOVE watching the Thermomix cook spaghetti have a look ….


Once combined, serve and sprinkle with Parmasan or equivalent veggie/vegan alternative – simple but delicious and less than a pound a head 😇
