It is now over a week since youngest went to Uni – I have been trying to sort out buying and cooking to feed the 2 of us.
Last night, I made veggie spaghetti, and it was lush, but I made wayyy too much, enough to feed 4 adults. Now, I,m not wasteful, and will eat the leftover for lunches, I have 2 X 2 pints of milk in the fridge as I over bought and the freezer is filling up with leftovers, I have GOT to cut back…
Tuesday is the day I write my shopping list and this week, I will try and have a use up and keep the shopping to a minimum – that,ll help the bank account too – it is looking very sparse after helping youngest set up for uni …. Aldi is great for great quality at low prices.
I went though the freezer and have more than enough meat, and home made ‘ready meals’, so have written my meal plan and hope to come in under £30 for the week, including household basics like loo rolls and cat food. Shopping list written for tomorrow’s Aldi trip….
Tonight, it is fairly easy to portion control, I am making Pork, honey and mustard Bugers, in Brioche buns with Sweet Potato fries.
The Bugers are from Market Porter, I buy when they have special offers and freeze and the burgers look really tasty, I am using the Chimichurri sauce I made at the weekend, as it needs using, and the ‘pickled’ red onion too. The fries were home cut and then frozen, so at least that’s something used up…
The sweet potato fries are sprinkled with olive oil, salt and pepper ready to bake in the oven.
I have 2 cobs of corn to use up too, I smother them in butter, wrap in food safe cling film and microwave for 4 minutes, leave for a minute that’s it – done 🤗
The burgers are griddled, as are the buns, Hubby wanted some Tzatziki with his so made a bit of that – Natrual yoghurt, chopped deseeded cucumber, garlic salt and chopped fresh mint leaves. I’ll have the Chimichurri, a handful of Rocket leaves – Ta-da – dinner 😋
Pud is cake – one for home, one for work 😇
