I have changed my planned meal tonight from Spanish Chicken to Bacon and Tomato Gnocchi. I spent 49p on a ball of Mozzerella whilst doing my weekly grocery shop, the rest I have in stock.
My whole shop cost £37.77 and that will be that for a week. It includes 3 bottles of wine, so if I minus that, it was £27.30 for essentials (wine gums are essentials😉)
I have 3 slices of ‘proper’ butchers bacon left in the fridge, it’s far too good to waste, thick and tasty – the rest of the Ingedients are from the store cupboard and fridge, tin of tomatoes, a squeeze of tomato puree, a wrinkly pepper, a shake of smoked paprika, 2 fat cloves of garlic, 2 tablespoons of plain yoghurt, chopped parsley, salt, pepper, a ripped up mozzarella and of course Gnocchi ….
I start by finely chopping an onion and 2 cloves of garlic, the bacon is chopped into ‘lardons’ and it all goes into a frying pan with a little olive oil, salt and pepper gently cooked off till the bacon fat renders down, at this point I add chopped pepper, then a good squeeze of tomato puree, a quick stir, to let it cook out, then add a tin of chopped tomatoes and a teaspoon of smoked paprika and chopped parsley stalks, add half a can of water and let this bubble away for 20 minutes. Then add to heaped tablespoons of Greek yoghurt and stir in, season to taste.
At this point I add the gnocchi – there is a debate on whether to pre boil or not, I have chosen not too, the sauce is ‘wet’ enough to cook the lovely little pillows, and still leave a nice consistency – once stirred in but into an ovenproof dish and top with torn mozzerella, chopped parsley, salt pepper and a glug of olive oil – then into a hot oven for 10 minutes till bubbling 😇
I froze one of the loaves I made on Sunday, so I will let that defrost to soak up the juices
