One Potato, Two Potato – Mash..

Busy day today, catching up on laundry and Hubby’s accounts, always makes my head spin by the end of the day, so an easy meal is needed.

I like to make most things from scratch, but tonight is a bit of a cheat – Homemade mashed potato with a delicious Chicken and Mushroom pie from a local butchers – these pies were recommended by one of Hubbies very ‘posh’ clients and they told us ‘you must try them – they are to DIE forrrrr…’ – they are lush, handmade, stuffed with good local chicken and feels like a proper treat.

My darling daughter will be joining us for dinner, she needs a bit of TLC 😘 She feels a bit bluerghh at the moment.

I also want to use up some of the excess milk I have, so will make a rice pudding in the Thermomix, one of hubby’s favorites. As we use semi skimmed, I will add a tin of evaporated milk to boost the creaminess.

Using the scales on the Thermomix, empty a tin of evaporated milk into the Thermomix bowl, then add enough milk to make it 1 litre, then add 130g of pudding rice, 40g sugar, a blob of vanilla bean paste and any other flavouring you enjoy ie Cimmimon, nutmeg etc.  Then on reverse speed 1, heat 90 cook for 50 mins it will look a bit runny but does thicken up a bit – simple and delicious

The photo’s are rubbish for the Rice pudding, but how do you show milk cooking? LOL
