Its a Chilli evening, so we are having Chilli with Nachos..
I have some truely lovely mince from Market Porter, so want to make the most of it. The rest of the ingredients are from Aldi, I’m using up some fresh bits from the veg drawers and a 3/4 pot of Greek yoghurt today and tomorrow before my shopping day on Wednesday.
I peel and finely dice a medium onion, and 2 fat cloves of garlic, and slice up a wrinkly pepper.
The onion and garlic are gently fried in a little oil, then the mince is broken up and browned off too.
Once this is done, I add a tin of chopped tomatoes a good squirt of tomato purée, stir through and add an oxo cube, a sprinkle of chilli flakes and teaspoon of cumin. Stir again and add a tin full of water, stir then simmer for 10 minutes. You can add kidney beans, but Hubby isn’t keen, so I don’t bother, but if you are stretching your meal, beans, mushrooms, a handful of porrage oats, this will bulk out without spoiling the taste – can’t tell you the amount of times one of the kids have turned up with a friend in tow for dinner, this makes it go further – also, if you use it as a topping for jacket potato, adding some grated cheese, it will make enough for 6-8 meals, not bad for £4 worth of mince and some ‘fridge gravel’ veg 😇
At this point, I add the sliced pepper (that’s what I had to use up), taste and add seasoning – then simmer for 20 minutes or so till thick and glossy.
While this is bubbling away, I open a pack of Tortilla chips, a jar of salsa, finely slice some limp spring onions and grate some cheddar, layer these up in an oven proof dish, with the cheese being the topping – this goes into a hot oven for 10 minutes till warmed through, and the cheese has melted.
I chop some Corriander ready to add to the chilli just before serving – add a good scoop of chilli to a bowl, with a large blob of yoghurt, the remaining coriander sprinked over the top and a good amount of ‘dressed’ nachoes to scoop up this lovely dinner.
It would be lovely to have a large glass of rich red wine to have with this, but we don’t have any, so a glass of water will have to do 🙄
