That’s a Wrap….

The end of my food week and we are left with the remains of fresh ingredients to use, spring onions, a half bag of Rocket, an inch of cucumber, a ratty green pepper, a half of a pot of Greek yoghurt, a few bits of coriander.


I have some chicken fillets in the freezer, which I released to defrost this morning, and Some Ras el Hanout, 2 tablespoons of which I added to the yoghurt, and covered the fillets with to marinate for an hour before putting into a preheated oven at 200. For those of you unfamiliar with Ras el Hanout, it is a North African spice mix, think tagine and you can imagine the flavours, it’s wonderful.


I will cook the chicken with some sliced onion and the sliced wrinkly pepper, I have sprinkled these with olive oil, salt and pepper.


Some of the flatbread I made last week were waiting in the freezer, these take next to no time to defrost, and I have some Aldi wraps just in case Hubby needs more πŸ˜‹, filled with a makeshift salad, and the marinated chicken, a minty yoghurt dressing – a yummy set of wraps will clear the fridge ready for topping up again πŸ˜‡


This is all part of my meal planning process, I check what we have in, and try and come up with something inspiring without breaking the bank – my lists are written, and shopping is done – another food week- yeahhhh…. Β I love food πŸ˜‹
