What a treat – I have a whole day to myself….
Hubby has headed to the mainland with friends to visit a trade fair – bit of a jolly boys outing…I rarely get a day with nothing essential to do, so I have planned to Potter 🤗
I have treated myself to a shop bought ‘luxury’ fish pie – I love fish pie, family not so keen… so that’s dinner sorted.
I will do some baking, a couple of orange cakes and a couple of chocolate cakes, for our works, I make them in ‘loaf’ form as they are easier to cut for work, especially for hubby’s chaps on worksites.
The recipes are for the Thermomix and I have done them before, the only difference is removing orange juice and replacing with cocoa powder and milk for the chocolate cake. http://createbakemake.com/2016/06/15/thermomix-orange-cake-recipe/
I make my own icing sugar in the Thermomix, and it works out 2 thirds cheaper- 49p for ordinary granulated sugar £1.49 for the same weight in icing sugar – as I bake a lot, it is a great penny saver 😇
I will also make some sweet potato and coconut soup for work lunches – this is a case of peeling and chopping 500g of sweet potatoes and peel and chop a medium onion, add this to a litre of water, a teaspoon of veggie stock, quarter of a block of coconut cream, or use a tin of coconut milk and reduce the water by 400ml. I add a tiny bit of chilli, and a little ginger, just to pep it up a bit – but that’s down to taste.
Simmer till softened then blend till smooth, season to taste.
I make some bread rolls to dunk too – 300ml warm water, a pack of dried yeast, 500g bread flour, a pinch of salt, mix into a dough then kneed for 10 minutes till a smooth dough, leave to prove for a least an hour, divide into rolls and allow to rise again for 30-40 minutes, and bake at 200 for 25 minutes, these can be frozen and grabbed in the morning to dunk in your lunchtime soup – easy.
I,ve made 4 rolls and a small freeform loaf for tomorrow’s supper 😇
