Fancy a Fakeaway….

You know those night when only a certain something will do… I really fancy Sweet and Sour Chicken, SO with the assistance of my dear Thermomix, that is what we are going to have… All the ingredients are from Aldi, so good value too ๐Ÿ˜‡

I,m using this recipe for the Sweet and Sour Sauceย

No, it’s not bright red like the commercial stuff, just nice stuff, no nasties…

Into the Thermomix bowl add 240ml Pineapple juice, I used the juice from the tin of pineapple and topped up with orange juice, 3 tablespoons of vinegar (I used red wine vinegar as that’s what I had), a teaspoon of soy sauce, 100g brown sugar, 3 tablespoons of corn flour, optional salt and chilli flakes.

Mix for 10 seconds on speed 4, then cook for 7 minutes, varoma heat, speed 2. Empty into a jar if keeping or add to pan if using straight away – phew – that was hard ๐Ÿ˜…

Only had yellow pepper, red or green would make it ‘pop’

I chop a medium sized onion, a bell pepper, and 2 sliced chicken breast or 4 sliced skinless, boneless chicken thighs – into an oiled pan and cook over a medium heat till chicken is cooked through – add the sweet and sour sauce, heat through and season to taste.

Whilst this is all happening, I cook a mug of brown rice, in 2 mugs of water and a knob of butter – bring to the boil, then simmer for a few minutes – turn off the heat and let the rice absorb the water – done.

I treated us to a bag of Prawn Crackers too ย – 59p at Aldi – not going to break the bank ๐Ÿค—

I did the weekly shop today, so we are all topped up, I had to purchase some extras as we have a visitor at the weekend…… my youngest is passing through, just for 2 nights – I can’t wait to see him ๐Ÿ˜˜ I am sworn to secrecy, as he wants to surprise Hubby – bless… ย however I think the drawer full of lager might give it away, if hubby looks…

Off to watch Ye Olde Bake Off ๐ŸŽช๐ŸŽ‚๐Ÿฐ๐Ÿช

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. We live on the beautiful Isle of Wight, Hubby and I were born here, and just love our home. As I hurtle towards 50, my life as a full time (working) parent is coming to an end, with my eldest 2 kids living their own lives, and my youngest who started University in September. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
