Root Veg Roundup…

After being spoilt this weekend, I thought I had better do some cooking 😄 I have a lot of root veg to use up, including swede, carrots, potatoes, parsnips as well as sweet potato, onions and leeks, Broccoli and Cauliflower – so a bit of rejiggle of meal plan and let the chopping commence.

img_1063Today will be Steak Pie (from local butchers, I just can’t compete on price or taste) with mashed swede (lots of pepper and butter), cauliflower and broccoli.

I start by peeling and cutting up the swede, it was massive and part of the Aldi super 6 at 45p – bargin…  I then do the same with the other root veg, which is bagged up for meals this week (patience dear reader 😉)

Please use a big SHARP knife for the swede, it makes it so much easier to cut and I use a standard veg peeler to skin it. Leave the diced swede in salted water till ready to cook.

I am going to steam the cauliflower and broccoli florets in the Thermomix varoma, I hate squidgy veg and steaming leaves it with a little bite still.

I serve the pie topped with gravy of the just add hot water variety – I love to cook, but proper gravy needs decent stock and I don’t have it today 😇
