Now this isn’t in any way authentic- it’s a bit of a bung it in dish….. we don’t like too much chilli heat, but ginger has its own delicious heat.
I bought some large frozen prawns from Aldi, I don’t mind the smaller frozen prawns but I think if they are going to be the star of the show, you might as well have them BIG 🍤
I start by slicing a pack of spring onions, very finely chopping a thumb size piece of ginger into shreds. A few years ago I ordered some kitchen gadgets from Amazon, and the tiny slicer I bought is amazing, it was 99p from China and gets used for ginger and spring onions all the time 🤓
For the rest of the stirfry Veg, I bought a pack from Aldi, for 99p it works out cheaper for the 2 of us than buying all the veg separately – if cooking for a family, probably not.
For the marinade for the prawns, in my teeny weeny blender which attached to my Bamix, I add 2 fat cloves of garlic, coriander stalks, a little bit of chilli (we are wimps) and a half teaspoon of sugar and the juice of half a lime – wiz till blended and pour over your prawns, stir to cover.
I take a pack of cheap instant noodles, break up and soak in boiling water, drain before adding.
Heat a couple of tablespoons of flavourless oil in a frying pan or wok, add the Spring onions, ginger, and veg mix – stir and add a teaspoon of soy sauce, and a pinch of salt and pepper, when cooked stir in the noodles and place into serving bowls.
In the hot pan, add the prawns, not the marinade, stir fry, then add the marinade – add the other half of the lime juice, spoon on top of the stirfry Veg and top with sliced coriander leaves.
I have also cooked some vegetable spring rolls and a bag of Prawn crackers from Aldi. Served with my home made sweet chilli sauce, Less than £5 in total for a Fakeaway, significantly cheap and quicker than your local takeaway.
