Feed a Cold…

Friends of our are of on their holidays , they were about to chuck 3 limes and a defrosted punnet of frozen cherries in the bin, when I had to step in… I’ll make some lime curd and cherry jam I said – and so I am 😇  Hubby is a bit poorly with a cold, so I am making him Rib Eye Steak and Jacket Potato for dinner with Aparagus – Chocolate swirled meringue and raspberries – Yummy…..

img_1139For the Lime Curd I use a Thermomix Lemon Curd recipe and just use Lime zest and juice instead.  http://www.recipecommunity.com.au/basics-recipes/lemon-curd/144753

img_1132I have fiddled with the recipe a bit, I have my 3 limes, 100g cubed butter, 130g sugar, 3 eggs. With the whisk attached in the Thermomix bowl, I add the zest and juice of the limes (100ml), I was 20ml short, so I added some squeezy lemon juice, then cook at heat 80 for 9 minutes at speed 3. It will jump around for a few seconds till the butter melts, then remove the whisk, scrape down the bowl and into a sterile jar.

img_1133A few minutes of prep and cooking and you have a delicious spread for your morning toast – I love my reamer, another friend bought it back for me as a gift from Morocco a couple of years ago, and it is amazing 😉

img_1136Into the Thermomix bowl go 375g Cherries, 175g sugar, a whole green apple (I used a Bradley from the garden), just quartered (for the pectin) and a good blob of vanilla bean paste – cook for 25 mins at Varoma heat speed 1 and into a sterile jar – I adore Cherries so I am really looking forward to this 😜

img_1138For dinner tonight, we are having amazing Rib Eye steak from Market Porter, keeping it simple served with a jacket potato, asparagus.

The steak and the Asparagus is griddled, the potato is microwaved for 10 mins and then into a hot oven for a half hour till crisp on the outside and fluffy in the middle. Drizzle Lemon juice over the grilled asparagus – its such a lovely meal….

I,ve also made Chocolate Swirled meringues for the poorly soldier 😇 Served with raspberries and cream – Feed a cold, starve a fever hey 🙄
