Sweet corn feast.. Meat Free Monday

It seems that it not just the game birds that have been at the sweetcorn, Hubby came home with 8 ears of corn asking that I cook them for Meat Free Monday as he has a craving for them with homemade bread and butter.

In my opinion, the best way to cook sweetcorn is on the BBQ, but as it is not BBQ weather, the second best option is smother each cob with butter, salt and pepper and wrap in food safe cling film and microwave for 4-6 minutes depending on how many your cooking – leave for a minute to cool slightly before taking out of the cling film.

The bread, made in the Thermomix, 300ml water, a pack of yeast, heat to 37, add 500g of bread flour a pinch of salt and mix on dough setting for 4 minutes, adding half a jar of chopped olives for the last 30 seconds.

Leave to rise for at least an hour, free form a loaf then leave to rise again and cook in a preheated oven at 200 for 40-50 minutes – add a cup of cold water into a oven tray at the bottom of the oven to create steam and a lovely crusty loaf.

Dinner is served…..

 

As I was going to use the oven, I thought I would make some scones, I rinsed the Thermomix bowl and there in 50g butter, 450g SR flour, 50 g sugar and whizzed on turbomfor 3 seconds, then added 1 egg and 250ml milk (I used half milk half yoghurt as it needed using). Cook for 10 minutes and take out to cool, delicious with butter and the home made cherry jam I made recently.
