Perfect Pork Steaks with Creamy Mushroom Sauce and Mustard mash

Wednesday again, been to work, done the Aldi food shopping and put it all away dishwasher emptied, vacuuming done, cats cuddled – time to make dinner…

img_1190I took some delicious Pork steaks from Market Porter out of the freezer last night and looking at what else needing using up, I had half a pack of button mushrooms to use and 2 baking potatoes, so Creamy Mushroom sauce and mashed potato with grain Mustard and peas – yummy.

img_1191I start with the mash Potato – roughly cut up the potatoes (I don’t peel them), boil them in salted water till tender, then I beat the potatoes with butter and a heaped teaspoon of grain mustard in the Kitchenaid till smooth – keep warm

Meanwhile, in a pan fry the pork steaks, in a splash of oil and a small knob of butter, when golden on both sides, I place them in an oven proof plate and place into the warmed oven whilst you cook the sauce.

img_1192I slice the mushrooms, finely dice a small onion and crush a clove of garlic. I gently fry the onion and garlic in a large knob of butter and the juices from the pork steaks, then add the mushrooms, stir to coat in the butter, fry for a minute or 2, then add 200 ml veg or chicken stock, turn up the heat, simmer till reduced and thickening, then add a good glut of double cream and season to taste.

Take the pork out of the oven to rest, stir any juices into the sauce. Whilst this is happening cook the peas (I wont insult you with a how-to for that)

Plate up and serve – yummy…

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. We live on the beautiful Isle of Wight, Hubby and I were born here, and just love our home. As I hurtle towards 50, my life as a full time (working) parent is coming to an end, with my eldest 2 kids living their own lives, and my youngest who started University in September. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
