Meat Free Monday – GNOCCHI ALLA GENOVESE

GNOCCHI ALLA GENOVESE or now known as Gnocchi with Asparagus and Pesto. A new recipe to me, so keen to try it ๐Ÿ˜„

Due to what I had in I have changed it using Asparagus (part of Aldi Super6 at the mo) rather than green beans, and the Pesto is not vegan cheese nor is the cream. I am sure it will be nearly as good as the original ๐Ÿ˜‡

I start by cutting and steaming the Asparagus for a couple of minutes till Al Dente and plunging the gnocchi in salted boiling water for a minute before draining.

In a pan add half the jar of Pesto and half a pot of double cream and stir over a medium heat, then add the gnocchi, Asparagus and Peas and stir till coated and cooked through, season to taste and serve with slices of Homemade bread ๐Ÿ˜

Shaped ready for second rise

The bread is made in the Thermomix, 300g water, 1 pack of yeast heat at 37 speed 1 for 2 minutes, then add 500g bread flour and a pinch of salt, mix on dough setting for 4 minutes, leave to rise for an hour, turn out and form into loaves (I make 2 small ones and freeze one) leave to rise again for half an hour then cook for 40 minutes at 200 (50-60 mins for 1 large loaf) and thrown a mug of water into an oven tray at the bottom of the oven to create steam for a lovely crusty loaf.

Using the egg whites from the Weekends Fondants, I’ll make some Chocolate swirled meringues for pud.

In a very clean mixer bowl put in the 2 egg whites, beat till doubled in volume and a thick white appearance, then add 200g caster sugar and continue to beat till glossy and stiff peaks. Melt 100g of dark chocolate and gently swirl into the meringue then spoon into a lined baking sheet and cook for 1 hour at 90, then switch off the oven and leave the oven door slightly opened till cold (I put a wooden spoon in the oven door)

My opinion is that although the gnocchi was delicious, it is very rich, and a whole bag of gnocchi would feed 3 or 4 and needs a lovely lemony dressed salad with it. Will make these changes next time ๐Ÿ˜‹

  1. It was really good, but needed something to cut through the richness, like a crunchy fresh salad – trouble is I am still cooking too much for the 2 of us, and we hate waste – not to fond of my waist at the moment either ๐Ÿ˜ฑ
