It’s Tax return time again and I have been checking and rechecking figures on Hubby’s behalf, so tonight meal needs to be quick but tasty.
Spaghetti and Meatballs
The sauce needs to be rich and delicious- I start it in the Thermomix as I use it to cook the spaghetti it’s going to need cleaning anyway 🤗
I add a peels and halved medium onion and 2/3 cloves of peeled garlic to the Thermomix bowl and wizz at speed 4 for 5 – 10 seconds till chopped, scrape down the bowl and add a good glug of olive oil and some salt and pepper. Cook at heat 90 speed 1 for 3 minutes till softened, then add a good squeeze of tomato purée and cook again for another 2 minutes at 90, speed 1. At this point add a tin of chopped tomatoes and cook down for 5 minutes at heat 98 speed 2. When done you can blitz at speed 8 with the MC in if you want a smooth sauce, or leave chunky, which I prefer, feel free to add extra veg, peppers, courgettes etc even some chilli if you like it spicy – a base tomato sauce is a wonderful thing 🤓 You could make double and freeze a batch for a quick freezer meal.
I am keeping it simple tonight. Next I put the meatballs into a medium hot chefs pan and with a little oil and butter, brown them all over then add the sauce, simmer till the meatballs are cooked through, stir in some mixed herbs, I would like to have used roughly torn basil but didn’t have any, season to taste.
