Hollow Legs – filling a teenager

Youngest is back from Uni for a week – Reading week, which is apparently starting with ‘pre drinks’ with his mates, also back from Uni at ours this evening.

I have had various texts and messages about what food is required by Youngest throughout the week – poor ‘half starved’ student πŸ™„

Tonight is pretty easy, Market Porter Pork and Mustard Burgers, Polenta Chips and Homemade coleslaw- followed by brownie and ice cream for those that want it.

I make the coleslaw in the Magimix using the slicing blades, I shred half a white cabbage, and a small white onion,then change the blade for the grating blade and grate some carrot – tip it all into a bowl, add some mayonnaise, salt and pepper and stir together.

I also love it with a mix of rapeseed oil and grain mustard with a glug of red wine vinegar and often change the veg for red cabbage for a winter slaw, or celariac for a remoulard with a mustardy mayonnaise πŸ˜‹

The polenta chips are from some I previously made and froze, and the burgers and buns will be griddled – simple and yummy.

I have made Tzatziki with peeled, deseeded, diced cucumber, 2 tablespoons of Greek yoghurt, a sprinkle of garlic powder and a fat teaspoon of mint sauce, as I don’t have any fresh mint – some crunchy home pickled red onion and some fresh and fiery Rocket leaves – yummy πŸ˜‹

Double Helpings for the poor student….

The big guns come out tomorrow as I am cooking for 6 of us and our Daughter and her boyfriend are joining us for a roast…
