No Fuss Food… Chicken, Chorizo and potato tray bake

Its cold, wet and well, late Autumn…. I fancy a cozy night in front of the fire with my Hubby and don’t want to be flitting in and out of the kitchen all evening.


I have some chicken breasts in the freezer and some fresh chorizo sausages in the fridge – when the chicken is defrosted, into an oven proof dish I chop the chicken into big chucks and the sausage too, I half the new potatoes and add some chunks of onion and pepper, as I have some to use up, drizzle with olive oil and sprinkle salt and pepper over – a good mix together and into a hot oven (200) for 30-40 mins till cooked through and all the lovely paprika oil has oozed out of the Sausages.



I am serving with Homemade Olive bread that I made the other day and froze.


I have been productive today and have made 2 different batches of soup, one lot of lentil and bacon, and one of Butternut squash and coconut – all frozen for work lunches.

The bacon and lentil is just a peeled onion, a clove of garlic into the Thermomix bowl, wizz on speed 7 for a few seconds to cut, then scrape the bowl down, add 4 slices of chopped bacon, a diced small potato and a diced small carrot and 25g butter – cook at Β heat 100 at speed 2 for 4 minutes, then add a litre of veg stock and 150g of red lentils and cook at 100 speed 2 for 20 minutes – blitz on speed 7 till smooth, taste and season.



I am freezing this soup inside a freezer bag, put into my microwaveable soup mugs, so that I have the right portions, just grab a bag and put in the mug and off I go to work.


I also had a half of a butternut squash that needed using up, so I thought I would make next weeks soup too – pretty much the same process, an onion chopped for a few seconds, the Butternut squash chopped and added, I take out the seeds, but don’t bother peeling it – I add a litre of veg stock, a half thumb size piece of peeled ginger and 4 tablespoon of coconut milk powder – cook at 100 speed 2 for 20 minutes – wizz at speed 7 for a minute, taste, season and enjoy 😊


My last make is for tomorrow, as my Mum in law is coming for dinner, I thought I would make some individual trifles. The jelly was made this morning, a thick fresh custard this afternoon, just need to top with whipped cream tomorrow.
