Meat Free Monday – Field Mushroom and Halloumi Burger ๐Ÿ˜

We have eaten some pretty rich food over the weekend, I have been craving something basic, but tasty – really fancied a burger, but not a meat feast… so Halloumi and field Mushroom burger with smoked paprika wedges and salad.

I found thisย Recipe. On Pinterest and it looked so good, I had to make something similar.

img_1419I am working with what I have got in, so it’s more of the inspiration than the actual recipe.

img_1422For the wedges, I microwave 2 baking potatoes for 7 minutes, then slice each into 8 pieces, toss in 2 tablespoons of olive oil, a teaspoon of smoked paprika and a sprinkle of sea salt, put onto a lined oven tray and bake at 200 for 20-30 minutes till golden.

img_1420I start making the marinade for the mushrooms, a splash of soy sauce, a teaspoon of English mustard, 3 tablespoons of sweet chilli sauce (homemade), salt and pepper a crushed clove of garlic and mix – cover the field mushrooms the marinade for 10 minutes.

img_1423Whilst you are waiting, take 4 pound coin thick slices of Halloumi, spray with oil and cook till golden in a hot pan. And slice some onion, place into some sugar and vinegar to ‘pickle’ for a few minutes.

Put the field mushrooms under a hot grill for 10 minutes, turning once.

Toast the cut side of Brioche rolls, I have put some homemade Harrissa into 2 tablespoons of mayonnaise and spread over the bun base, then I added some Rocket, some of the ‘pickled’ onion, the Mushroom, the Halloumi, a drizzle of Homemade sweet chilli sauce, a bit of coriander ย and the lid.

Serve with the spicy wedges and a blob of Harrissa Mayo- Yummm….
