Keema Curry – Minced meat curry with brown rice

It’s cold and yucky here, but compared with much of the country, we are lucky.  My heart goes out to those of you with flooding and storm damage x

I needed to catch up with some domestics today, so wanted something quick and tasty to put on the table, I am also sharing this recipe with Youngest, so he can add it to his Uni food repertoire… 😇 He is getting into this cooking thing 🤗 Keema Curry, with Brown rice 😋

I start by chopping a medium brown onion, gently frying in a little oil, I add a sliced yellow pepper as I have one that needs using, then add a pack of minced beef, torn up and brown that off.

img_1427At this stage I add a tin of chopped tomatoes and 2 spoon of madras curry paste, a really good cupboard standby, stir though, add half a tomato tin of water and a handful of frozen peas, turn the heat right down and leave to simmer for 15 minutes, stirring occasionally.

img_1430The rice, I cook by the absorbsion method, 2 cups of water to one cup of rice and a knob of butter, gently bring to the boil, allow to simmer for a few minutes, then put a lid on the pan, turn the heat off and let the rice absorb the excess water.

I am serving this with chopped coriander, a blob of Greek yoghurt and some lime pickle – even using a small pack of mince, there is too much for us, so I am freezing a portion, for a quick meal another night.
